It is very popular in <a href=\"http:\/\/wangxiaohu.com\/index.php\/2005\/09\/26\/chinese-food-at-mac\/\">Chinese-like<\/a> food courts and cafeterias in North America. I guess it pretty much because it is low cost and its recipe is simple to follow. Sometime it is called Lo Mein (\u635e\u9762), means &#8220;noodles out of soup&#8221; in Chinese,\u00a0to differentiate from soup noodles. In Chinese foods, Lo Mein from\u00a0various cities can be very different. The differences take places in\u00a0preparation and\u00a0ingredients.<\/p>\n<p align=\"center\"><a href=\"https:\/\/i0.wp.com\/wangxiaohu.com\/wp-content\/uploads\/2007\/03\/windowslivewriterzhengzhounoodles-14311image07.png\" atomicselection=\"true\"><img loading=\"lazy\" decoding=\"async\" style=\"border-right: 0px; border-top: 0px; border-left: 0px; border-bottom: 0px\" height=\"175\" alt=\"Zhengzhou Noodles\" src=\"https:\/\/i0.wp.com\/wangxiaohu.com\/wp-content\/uploads\/2007\/03\/windowslivewriterzhengzhounoodles-14311image0-thumb5.png?resize=240%2C175\" width=\"240\" border=\"0\" data-recalc-dims=\"1\"><\/a><\/p>\n<p align=\"left\">This evening, I made myself my favorite Lo Mein. It is called <em>Zhengzhou Noodles with Pork and Spinach<\/em>, where <a href=\"http:\/\/local.live.com\/default.aspx?v=2&#038;cp=33.847608~113.988647&#038;style=r&#038;lvl=7&#038;tilt=-90&#038;dir=0&#038;alt=-1000&#038;sp=Point.pssygxtg40hj_Zhengzhou%2c%20Henan___\">Zhengzhou<\/a> is the capital city\u00a0of Henan Province, and it is my town where I was born. Just like Shanghai Noodles, its recipe is very simple too.<\/p>\n<p align=\"left\"><strong>Ingredients<\/strong>: Any kinds of noodles (e.g. wheat noodles), Any kind of grounded meat (e.g. pork), any kind of green leaf vegetable (e.g. spinach), raw garlic (4 slices, grounded), oil, soy sauce and salt.<\/p>\n<p align=\"left\">I never find out how much\u00a0some item in the ingredients is required, because I\u00a0hate to\u00a0remember the numbers and units. Take a look at the above picture and figure it out yourself. Actually the ingredients are not important here. It is the preparation identifies Zhengzhou Noodles.<\/p>\n<p align=\"left\"><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>\n<div align=\"left\">Prepare the noodles in the normal way. Take away the water and cool down in a plate.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Put 2 spoons of oil in a frying pan and turn on the stove.<\/div>\n<\/li>\n<li>\n<div align=\"left\">When it is hot enough, put the grounded pork and 4 spoons of soy sauce in.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Stir frying for a minute, then put spinach in.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Keep stirring until spinach is soften.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Add some water and wait until it boils.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Turn off the stove. Add grounded garlic and salt according to your taste.<\/div>\n<\/li>\n<li>\n<div align=\"left\">Mix with noodles and enjoy it.<\/div>\n<\/li>\n<\/ol>\n<p align=\"left\">My father taught me\u00a0how to make\u00a0it on phone\u00a0when I first learned cooking in Canada. Before I\u00a0learned cooking other foods, I made myself Zhengzhou noodles almost every week. I tried different noodles, meat and vegetables\u00a0but this one is my favorite.
